Dit is essentieel om de diepe robijnrode kleur, de stevige structuur van de Nebbiolo en het gulle fruit van de Barbera en Merlot maximaal te extraheren. Zowel de alcoholische vergisting als de daaropvolgende malolactische gisting vinden plaats in roestvrij staal. De malolactische gisting zorgt ervoor dat de van nature hoge en strakke zuren van de Barbera-druif worden omgezet in mildere melkzuren, wat de wijn zijn kenmerkende ronde en vlezige textuur geeft. De topblend ondergaat een intensieve houtlagering van maar liefst \u003cb\u003e24 maanden op eikenhouten vaten\u003c\/b\u003e. Deze langdurige rijping integreert de stevige tannines en verrijkt de wijn met complexe, tertiaire aroma's van cacao, tabak en balsamico. Inspiratie werd gevonden bij de Super Tuscans (Toscana) in combinatie met Bordeaux wijnen.
